A true grain-to-glass operation, this all-lady production crew keeps their product local and can claim to never have used neutral grain spirits or blended their products with base spirits from other distillers.
The cocktail bar/tasting room is a as much an art gallery as it is a bar, and features creations from at least four local artists at any given time. HANDMADE STILLS
It’s one thing to craft a whiskey from grain-to-glass. It’s another entirely to craft the very stills that help produce that whiskey. Heather Bean, the head distiller, has engineered her own stills to take the unique character of her whiskey even further.
OPEN FERMENTATION
Syntax employs the technique of open fermentation. Typically, when yeast and unfermented mash are added together they are sealed off for total control of the fermenting process. Open fermentation allows for the air and anything in it to alter the fermenting process and add more components to the wash that’s brought to distillation.

Syntax Spirits Distillery and Cocktail Bar is woman-owned, led by an all-female production staff and employs an 80% female staff overall.

WATER
From Colorado’s only federally-designated Wild and Scenic River, the Cache la Poudre. The city of Greeley has first water rights of the river and the snowmelt/whitewater that flows inside of it. In 2017 Greeley’s water was voted by the American Water Works Association as the “Best of the Best” as well as securing the People’s choice award at the same event.
HEAD DISTILLER
Heather Bean’s chores as a child included making batches of wine by the age of 8. She won an award for her project “The Distillation of Wood” at the young age of 10. The rest is history. Drawing from her merits as a chemical-mechanical-software engineer she built her own stills, opened her own cocktail bar, and spends most days covered in grain dust and mash as the head distiller.
STILLS
Syntax operates with two fractionating column stills named “Biggie” and “Smalls”. They weren’t just named by the head distiller – they were created by her too! She handled the designing and building of the columns, to all of the welding and steamfitting required to get the system running.
HISTORY
Syntax Spirits is the end-result of a true auteur in the industry, Heather Bean. She left an R&D engineering career and teamed up with Jeff Copeland, an atmospheric scientist in the office and long-time brewer at home. The distillery officially kicked off in 2010 with the goal of making great, unique spirits the right way – from grain to glass with locally-sourced ingredients.
